With an already impressive outlet line up and more to come, coupled with function facilities, The Italian Group has set its sights on growth in 2021. With renovations of its latest venue already under way in the heart of Newcastle’s CBD, this is a fantastic career move for a Head Chef and Sous Chef looking for that next career challenge.

We are seeking a creative and determined Head Chef and Sous Chef that come with experience in a large venue or restaurant environment and able to take the reins of this multi-concept venue opening in late-February. This is not an office role, but more of a creative undertaking that will see you across the venue’s multiple concepts daily, driving the team and focusing on consistency. 

Skills & experience

  • At least 2 years working experience as a Head Chef or Sous Chef
  • Excellent record of kitchen management
  • Ability to spot and resolve problems efficiently
  • Develops effective leadership skills and relationships with individuals at all levels, from diverse backgrounds, cultures and locations
  • Keep up with cooking trends and best practices
  • Ability to use kitchen management software
  • Self-motivated and an excellent communicator
  • Ability to manage costs in line with business requirements and agreed budgets
  • Ability to manage facility admin (i.e. Insurances, equipment, maintaining a clean and functional workspace)
  • Ability to manage KPIs (Labour costs %, Employee Happiness, Incident Count, Customer satisfaction of the product, manage food/ingredient costs %)

Tasks & responsibilities

  • Hiring new employees
  • Checking food quality receiving
  • Checking prices in market for better rates
  • Stock and inventory control
  • Regular team meetings (including 1on1's with each team member)
  • Scheduling and rostering
  • Managing and creating workload 
  • Menu development
  • Food ordering
  • Quality assurance and managing entire production facility

There are 2 full-time positions with genuine sponsorship opportunities through Napoli Centrale Pty Ltd and the ability to across multiple venues within The Italian Group.

Salary Range: $70,000 - $100,000
